Ingredients

  • 1/2 Avacado
  • 1 pieces Toast
  • Salt
  • Pepper
  • Everything but the bagel seasoning
  • Red pepper flakes
  • Siracha (optional)
  • 1 Egg
  • 1 tbsp Vinegar

Instructions

  1. 1Bring a pot of water & splash of vinegar to a rolling boil and then turn heat down to low/simmer
  2. 2Using a spoon create a circular motion in the water and crack egg into the middle of the water spiral. Don’t touch for 5-6 minutes until whites are fully cooked and inside of egg is runny
  3. 3Prepare toast by eventually spread avacado and top with desired seasonings. I used salt, pepper, everything but the bagel seasoning, red pepper flakes, and siracha if you like an extra kick
  4. 4Top toast with poached egg and enjoy :)

Breakfasts Built On Eggs And Cottage Cheese

Mornings move fast, and the breakfast that actually gets eaten is the one you can put together half awake. Eggs, cottage cheese, and a slice of good toast do most of the work here.

Cooks on Pepper reach for this collection on weeknights when they want breakfast for dinner, and on Sunday afternoons when they're making something ahead for the week.

Every recipe here leans on eggs and cottage cheese: avocado toast with a poached egg, a breakfast quesadilla on a carb balance wrap, protein cottage cheese pancakes, an overnight crockpot breakfast casserole, breakfast pizza omelette, and bake and take egg muffins.

Quick Tips

  1. 1

    Blend the pancake batter

Run the oats, egg whites, and cottage cheese in a blender for 30 seconds so the oats break down and the batter pours smooth.

  2. 2

    Swirl the poaching water

Bring water to a bare simmer, stir a little whirlpool, and slide the egg in for 3 minutes for a runny yolk.

  3. 3

    Grease the muffin tin well

Spray every cup, including the top rim, then bake egg muffins at 350°F for 20 to 25 minutes so they lift out clean.

  4. 4

    Drain wet vegetables first

Cook peppers and onions 4 to 5 minutes and pour off the liquid before adding eggs, or your casserole turns watery.
