Open in Pepper →Cube steak is cheap, it's at every grocery store, and it can go rubbery in about four minutes if you rush it. The fix is low heat and time, whether that's a covered pan in the oven or a slow cooker doing the work while you're at ball practice.
Cooks on Pepper reach for this collection on the nights when supper has to be mostly hands-off — meat, gravy, potatoes or noodles, and one pan to wash.
Every recipe here leans on gravy to do the heavy lifting: Smothered Cube Steak and Onions with Potatoes, Crockpot Beef Cube Steaks and Gravy, Slow Cooker Mississippi Cubed Steak, Country Fried Steak and Milk Gravy, and Cube Steak with Egg Noodles.
Brown the steaks first
Sear each side 2 to 3 minutes in a hot skillet before it goes in the oven or crockpot. That crust is where the flavor in the gravy comes from.
Cover it tight
Foil or a lid over the dish traps steam so the meat braises instead of drying out. Bake at 325°F for about 2 hours.
Season the flour
Stir salt, pepper, and a little seasoning right into the dredging flour, about 1 teaspoon each per cup, so the coating isn't bland.
Let it rest covered
Pull the pan out and leave it covered 10 minutes before serving. The gravy thickens up and the meat soaks a little back in.
