Squeeze the spinach dry
Frozen chopped spinach holds a lot of water. Thaw it and wring it out in a clean towel until no more liquid comes, or the center stays wet.
Grease the pan well
With no crust, the eggs sit right on the dish. Butter or spray a 9-inch pie plate all the way up the sides so slices lift out clean.
Bake until barely set
Pull it at 350°F when the center jiggles just slightly, usually 35 to 40 minutes. It keeps cooking on the counter.
