Skip The Crust And Still Get Dinner

A quiche without a crust is just eggs, dairy, and whatever is in the fridge, baked until it sets. No dough to roll, no pie plate to blind bake, and it slices just fine once it cools a few minutes.

Cooks on Pepper reach for these on Sunday afternoons when they want breakfast squares to reheat all week, and on the weeknights when dinner needs to be eggs and nobody minds.

Every recipe here is built on eggs and something creamy: Bacon and Cheese Crustless Quiche with heavy cream and cheddar, Crustless Spinach Mushroom Quiche using frozen vegetables, Ham & Spinach Quiche with ricotta, and a Cottage Cheese & Spinach Crustless Quiche with mozzarella.

Quick Tips

  1. 1

    Squeeze the spinach dry

Frozen chopped spinach holds a lot of water. Thaw it and wring it out in a clean towel until no more liquid comes, or the center stays wet.

  2. 2

    Grease the pan well

With no crust, the eggs sit right on the dish. Butter or spray a 9-inch pie plate all the way up the sides so slices lift out clean.

  3. 3

    Bake until barely set

Pull it at 350°F when the center jiggles just slightly, usually 35 to 40 minutes. It keeps cooking on the counter.

  4. 4

    Cook the vegetables first

Mushrooms, onion, and bell pepper give off water. Saute them 5 to 7 minutes before they go into the eggs.
