Pull the membrane off
Slide a butter knife under the thin silver skin on the bone side of the rack and pull it off with a paper towel. It never softens, even after 8 hours.
Sear short ribs first
Brown bone-in short ribs in a tablespoon of oil, about 3 minutes a side, before they go in the crock. That crust is where the deep beefy flavor comes from.
Go easy on liquid
Ribs give off plenty of their own juice, so 1/2 to 1 cup of water, broth, or vinegar is enough. Too much and the sauce turns thin and washed out.
Finish under the broiler
Brush the cooked ribs with sauce and broil 3 to 5 minutes until the edges bubble and char. Watch them close — sugary sauce burns fast.
