Chicken, Cream Cheese, Ranch, Bacon, Done

Four ingredients you already keep on hand turn into a dinner everybody at the table actually finishes. It shreds, it stretches, and it goes over pasta, rice, buns, or straight into a casserole dish.

Cooks on Pepper reach for these on the mornings when they know the afternoon is going to get away from them — chicken in the slow cooker before work, dinner waiting at six.

Every recipe here starts with chicken breasts and ends creamy: Crockpot Crack Chicken, Chicken Bacon Ranch Pasta, Crack Chicken Penne, Crock Pot Crack Chicken Sandwiches, Crack Chicken Casserole, Slow Cooker Crack Chicken and Rice, and Chicken Bacon Ranch Roll-ups.

Quick Tips

  1. 1

    Soften the cream cheese

Set the 8 oz block on the counter 30 minutes ahead, or cube it, so it melts smooth instead of leaving white lumps in the sauce.

  2. 2

    Shred then stir back

Pull the chicken out after 4 hours on high, shred it with two forks, and return it to the pot for 15 minutes to soak up the ranch sauce.

  3. 3

    Cook bacon separately

Crisp the bacon in a skillet and crumble it over at the end so it stays crunchy instead of going soft in the slow cooker.

  4. 4

    Hold back the pasta

Boil penne or elbows 1 minute shy of the box time and fold them in last, so they don't turn to mush in the sauce.
