Crab Cakes Worth Making On A Tuesday

Good crab cakes are mostly crab, held together with just enough egg and mayonnaise to keep them from falling apart in the pan. Once you learn that ratio, dinner takes about twenty minutes.

Cooks on Pepper reach for this collection when they want something that feels like a restaurant plate without a long night in the kitchen, or when there's a can of lump crab in the pantry and no plan yet.

Every recipe here starts with crab and goes somewhere useful: Air Fried Crab Cakes for a quick batch, Maryland Jumbo Lump Crab Cakes when the crab is good enough to stand alone, Cheddar Bay Crab Cakes with Lemon Butter Drizzle for something richer, a Crab Cake Sandwich with Lemon Aioli on brioche, and Poor Man's Crab Cakes made with grated zucchini when crab isn't in the budget.

Quick Tips

  1. 1

    Chill before you cook

Shape the cakes and refrigerate them 30 minutes so the binder sets. They hold together far better in the pan or air fryer.

  2. 2

    Go easy on the filler

Use about 1/3 cup breadcrumbs or crushed biscuit mix per pound of crab. More than that and you taste bread, not crab.

  3. 3

    Fold, don't stir

Mix the mayonnaise, egg, and seasoning first, then fold the crab in with a spatula in 5 or 6 strokes to keep the lumps whole.

  4. 4

    Get the pan hot

Heat 2 tablespoons of oil or butter over medium-high and cook 3 to 4 minutes per side, flipping only once for a real crust.
