Boil it short
Fresh sweet corn only needs 4 to 6 minutes in boiling water. Any longer and the kernels go tough and chewy.
Add sugar to the water
A cup of sugar and a tablespoon of honey in the pot sweetens ears that came out bland at the store.
Dry corn before grilling
Pat the ears dry and brush with oil so they char instead of steam. Turn every 3 to 4 minutes for about 12 minutes total.
Salt the butter, not the water
Salt in boiling water can firm up the kernels, so season with butter and Cajun or garlic powder after the corn comes out.
