Open in Pepper →A splash of heavy cream poured in the pan before baking soaks into the bottom of the rolls and keeps the middles soft instead of dry. It's the one step that turns a plain pan of rolls into something people stand around the oven waiting for.
Cooks on Pepper reach for this collection on Christmas morning, on a snow day, or any Saturday when breakfast needs to feel like a little something without a lot of work before coffee.
Every recipe here is a cinnamon roll, from the canned-dough shortcut of TikTok Cinnamon Rolls and Copycat Cinnabon cinnamon rolls to from-scratch Super Soft Cinnamon Rolls, Discard Cinnamon rolls, Banana Bread Cinnamon Rolls, Red Velvet Cinnamon Rolls, and quick Lazy Day Cinnamon Rolls.
Warm the cream slightly
Heat the heavy cream to just warm, about 30 seconds in the microwave, so it doesn't cool the dough and slow the rise.
Pour around the rolls
Drizzle about 1/2 cup of cream between and around the rolls, not over the tops, so the sugar topping stays put.
Check the yeast temp
Milk for the dough should sit between 105 and 110 degrees; hotter than that kills the yeast and the rolls stay flat.
Frost while still warm
Spread the icing after the rolls rest 5 minutes so it melts into the swirls instead of sliding off.
