Why Chuck Steak Rewards Patient Cooking

Chuck steak comes from the shoulder and contains abundant connective tissue, which makes it tough when cooked quickly but extraordinarily rich and tender when braised low and slow. It's one of the most flavorful beef cuts available at any price point.

For quicker preparations, marinate for at least 8 hours and cook to medium-rare — the fat marbling keeps it from drying out. For braising, the collagen breaks down into gelatin over several hours, creating a sauce that practically coats itself.

On Pepper, home cooks return to these recipes for chuck steak, celebrating an affordable cut that consistently delivers on flavor and satisfaction.

Quick Tips

  1. 1

    Marinate at least 8 hours

Chuck steak needs time for acid and enzymes to do their work. Marinate overnight in the fridge with something acidic — vinegar, citrus, or yogurt — for noticeably more tender results.

  2. 2

    Pat completely dry first

Before searing or grilling, pat chuck steak bone-dry with paper towels. Surface moisture turns into steam and prevents the deep brown crust that builds flavor.

  3. 3

    Braise low for tenderness

For braising, keep the oven at 325°F and plan for at least 2.5 to 3 hours. The collagen breaks down into gelatin at that temperature range, creating fork-tender meat and a self-thickening sauce.

  4. 4

    Slice against the grain

Chuck has prominent muscle fibers running through it. Always slice across those fibers rather than parallel — it shortens them and makes every bite significantly more tender.
