So, it’s not really famous but it is a must have request from my kids and husband. Chocolate Devils Food Cake with caramel and toffee. I’ve also made this in mini dessert cups with mini spoons for my housewarming party and it was a hit with everyone.

Bloom the cocoa first
Whisk your cocoa powder with 1 cup of boiling water or hot coffee and let it sit 5 minutes before adding it to the batter. It deepens the chocolate flavor.
Line the pans with parchment
Grease the pans, then set a circle of parchment in the bottom of each 9-inch pan. The layers come out clean every time.
Cool completely before frosting
Let layers cool in the pan 10 minutes, then turn out onto a rack for at least 1 hour. Warm cake tears and melts the frosting right off.
Check at the earliest time
Start testing at 28 minutes with a toothpick in the center — a few moist crumbs means done, wet batter means give it 3 more minutes.
