Jalapeño Deer Chili

Ingredients

  • 1 pound ground deer
  • 1/2 stick butter
  • 1 yellow onion-diced
  • 1 green bell pepper-diced
  • 1 jalapeño-finely minced
  • garlic-minced
  • cajun seasoning
  • 2 tablespoons chili seasoning
  • 6 ounces tomato paste
  • 10 ounces diced tomatoes
  • 2 tablespoons white sugar
  • 32 ounces beef broth
  • fresh jalapeño- for garnish
  • shredded gruyère-for garnish
  • 1/8 cup flour
  • 3 tablespoons chili powder
  • 1/2 tablespoon red pepper flakes
  • 1 tablespoon granulated garlic
  • 1 tablespoons granulated onion
  • 1 1/2 teaspoon cumin
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons black pepper

Instructions

  1. 1NOTE: you will have leftover seasoning!!! Keep stored at room temp in a mason jar with your other seasonings:)
  2. 2In a pot on medium heat, brown the ground deer. once brown, remove from the pot
  3. 3Melt the butter and sauté the onion and peppers on medium heat for about 25 minutes. Add in the garlic and tomato paste and sauté until the paste starts to looks brown.
  4. 4Add in the tomatoes, sugar, cooked meat, and season to taste.
  5. 5Pour in the broth and let simmer on medium-low for about an hour.
  6. 6Garnish with your choices and serve!
