Ingredients

  • 4 Cube streaks; pretenderized
  • Salt; for seasoning the meat
  • 2 Large eggs; beaten
  • 1/2 cup Milk
  • 2 cups All-purpose flour
  • 2 tsp Kosher salt for the breading
  • 1 1/2 tsp Garlic powder
  • 1/2 tsp Cayenne pepper
  • Canola oil; for frying
  • 5-6 Tbsp Pan drippings
  • 1/4 cup All-purpose flour
  • 2-3 cups Milk
  • Salt; to taste
  • Fresh ground pepper; to taste

Instructions

  1. 1Prepare the meat. Place each steak between 2 sheets of plastic wrap. Pound each steak thin using a meat mallet/tenderizer. Pounding the steaks thin prevents them from being way too chewy. Salt each steak to taste and set aside.
  2. 2Next, preheat the oven to 200°F. Place a wire wrack on a baking sheet. You’ll use the oven to keep the steaks warm and crisp while you cook the gravy.
  3. 3Bread the steaks: 1) prepare to shallow dishes for dredging the steaks. In the first dish, combine the flour, kosher salt, garlic powder, and cayenne pepper. In the second dish, combine the beaten eggs with the milk. 2) Begin dredging by pressing each steak in the flour mixture with the heel of your hands on each side, next dredge the floured steaks into the egg wash, and then dredge one more time into the flour mixture, then set on a separate plate. Repeat this process for all 4 steaks.
  4. 4In a large frying pan, add enough oil to cover the bottom of the pan by 1/4 inch. Heat the oil to 350°F or until it sizzles when you drop a little flour into it. If it doesn’t sizzle, it isn’t ready. If it burns, the oil is too hot; reduce the heat.
  5. 5Working one at a time, lay a coated steak into the hot oil. Use a metal spoon to spoon some of the hot oil over the steak. This helps to set the coating. Cook the steak on one side until you start to see the steak edges turn golden in color (about 2 minutes). Gently turn the steak over and continue to cook the other side for an additional 2 minutes. Once the steak is cooked to golden on both sides, using a pair of tongs, gently remove the steak from the oil and place on the wire rack. Repeat this process until all steaks have been cooked. Place the steaks in the oven to keep warm while you prepare the gravy.
  6. 6For the gravy, in a large pan, over medium heat, add 5-6 Tbsp of the pan drippings. Whisk in 1/4 cup of flour. Continue to cook 5-6 minutes, stirring constantly. Slowly add in the milk, stirring constantly. Note the mixture will thicken up initially, and will loosen as you add more milk. Add milk to your desired thickness for the gravy. If it’s too thick, add more milk. If it’s too thin, let it cook longer. Season with salt and lots of pepper to taste.
  7. 7Serve the country chicken fried steak with gravy and your favorite side dishes. Serve and enjoy!

Crispy Crust and Plenty of Gravy

Cube steak is cheap, cooks in minutes, and turns into something worth sitting down for once it hits hot oil. The crust is the whole point, and so is the pan gravy you build from the drippings afterward.

Cooks on Pepper reach for these on nights when the family wants something filling and the clock says 6:15, or on Sunday when there's time to mash potatoes alongside.

Every recipe here is a real plate of chicken fried steak, from Country Chicken Fried Steak w/ Gravy to Crispy Chicken Fried Steak with Peppery White Gravy, Chicken Fried Steak with Pan Gravy, and Chicken Fried Steak over Mashed Potatoes.

Quick Tips

  1. 1

    Dredge twice for crust

Go flour, egg, then flour again, pressing hard each time. Let the coated steaks rest 10 minutes so the breading sticks instead of sliding off in the oil.

  2. 2

    Keep the oil at 350

Use about 1/2 inch of oil and check with a thermometer. Below 325 the crust soaks up grease; above 375 it browns before the meat is done.

  3. 3

    Fry in two batches

Two steaks at a time in a 12-inch skillet keeps the oil temperature up. Crowding drops it 50 degrees and you get pale, soggy breading.

  4. 4

    Build gravy from drippings

Pour off all but 3 tablespoons of fat, whisk in 3 tablespoons flour, cook 1 minute, then add 2 cups milk and stir until it coats a spoon.
