Shred your own cheese
Blocks melt smoother than pre-shredded, which is coated to keep it from clumping. Grate about 1/2 cup per sandwich.
Cook it low and slow
Medium-low heat for 4 to 5 minutes a side lets the cheese melt before the bread burns.
Butter the bread, not the pan
Spread 1 tablespoon softened butter or mayonnaise edge to edge so the whole slice browns evenly.
Press it with a lid
Set a pan lid or another skillet on top for the first 2 minutes to push the bread into the cheese.
