Open in Pepper →Cheese dip is the one dish that never makes it to the table. You set it down with a bag of chips and people just park there, talking with a chip in hand, and that's half the reason you made it.
Cooks on Pepper reach for these on game days, church potlucks, and any Friday night when dinner is going to be snacks and nobody's complaining.
Every recipe here is a real pot of melted cheese — Beer Cheese Dip with cream cheese and sharp cheddar, Bacon Jalapeño Pimento Cheese Dip, Mexican White Cheese Dip made with pepper jack and white American, a 3 ingredient cheese dip with breakfast sausage and Rotel, plus sweet ones like Jalapeño Cranberry Cream Cheese Dip and Salt Caramel Peach Cobbler Cream Cheese Dip.
Shred your own cheese
Bagged shreds are coated with starch that turns dip grainy. Grate a block yourself and it melts smooth in about 5 minutes.
Melt it low and slow
Keep the burner on low or medium-low and stir often; cheese that boils will break and go oily.
Soften the cream cheese first
Leave the block on the counter 30 minutes or microwave 30 seconds so it blends in without lumps.
Keep it warm to serve
Move the dip to a small slow cooker on warm, and stir in a splash of milk or beer every 20 minutes if it thickens.
