One Block Of Cheese Makes The Sauce

A block of garlic-and-herb cheese melts down into a sauce without a roux, a whisk, or a single lump. Toss it with hot pasta and the starchy water and you have dinner in the time it takes the noodles to cook.

Cooks on Pepper reach for these on the nights when the fridge is thin and everybody is hungry at once — one pot, a bag of pasta, whatever vegetable is still good in the crisper.

Every recipe here leans on that same trick: Boursin Cheese Pasta with Broccoli, Roasted Tomatoes with Boursin Cheese Sauce, Creamy Mushroom Gnocchi, Baked Stuffed Chicken Breasts with Herb Breadcrumbs, Bacon and Brussels Sprouts, and a homemade version made from cream cheese and whipped butter.

Quick Tips

  1. 1

    Save the pasta water

Scoop out a cup before draining. Add it a few tablespoons at a time to loosen the cheese into a glossy sauce.

  2. 2

    Let the cheese soften

Set the 5.2 oz package on the counter 20 to 30 minutes ahead so it melts evenly instead of clumping in the hot pan.

  3. 3

    Cook broccoli with the pasta

Drop the florets into the boiling water for the last 3 to 4 minutes so they come out tender and you wash one less pot.

  4. 4

    Brown the sausage first

Give the smoked or chicken sausage 5 minutes in the hot pan, then build the sauce right on top of those browned bits.
