Save the pasta water
Scoop out a cup before draining. Add it a few tablespoons at a time to loosen the cheese into a glossy sauce.
Let the cheese soften
Set the 5.2 oz package on the counter 20 to 30 minutes ahead so it melts evenly instead of clumping in the hot pan.
Cook broccoli with the pasta
Drop the florets into the boiling water for the last 3 to 4 minutes so they come out tender and you wash one less pot.
Brown the sausage first
Give the smoked or chicken sausage 5 minutes in the hot pan, then build the sauce right on top of those browned bits.
