Toss berries in flour
Coat 1 cup of blueberries in a tablespoon of the flour before folding them in so they don't all sink to the bottom.
Soften butter properly
Set the butter out 30 to 45 minutes ahead so it creams with the sugar into something light instead of greasy clumps.
Stop stirring early
Mix just until the flour disappears, about 10 to 15 strokes by hand, or the cake turns tough and rubbery.
Cool before slicing
Give the cake 20 minutes in the pan so the berry pockets set and the squares come out clean.
