Ingredients

  • 1 stick Butter
  • 3/4 cup Sugar
  • 1 tsp Vanilla
  • 1 Egg
  • 2 cups Flour
  • 2 tsp Baking powder
  • 1/4 tsp Salt
  • 3/4 cup Milk
  • 3 tbsp Softened butter
  • 1 tbsp Cinnamon
  • 1/2 cup Flour
  • 1/2 cup Brown sugar
  • 5 tbsp Softened butter
  • 3/4 cip Flour
  • 1/2 cup Brown sugar
  • 1 tbsp Cinnamon

Instructions

  1. 1Preheat the oven to 350°. In the bowl of a mixer, cream together the butter and sugar, scraping down the sides occasionally. Add the vanilla and egg, mix in. In a separate bowl, mix together the flour, baking powder and salt. Add one half of it to the mixer, and when mostly combined, add the milk. Once the milk is mostly incorporated, add the rest of the flour.
  2. 2* To make filling: in a small bowl, pinch together the softened butter, flour, sugar and cinnamon until soft crumbs form. * To make topping: add the butter, flour, brown sugar and cinnamon to a food processor and pulse until coarse crumbs form
  3. 3Pour in ½ of cake batter, and spread to all four corners. Sprinkle the filling over top, then pour in remaining cake batter, and spread carefully across the top.
  4. 4Bake for 45-50 minutes, until a toothpick inserted comes out clean. Cool to warm on wire rack before serving. Enjoy!!

A Coffee Cake Worth Waking Up For

Coffee cake is the kind of baking that fits around real life. You stir it together the night before or first thing, and the whole house smells like cinnamon and warm berries before anybody's dressed.

Cooks on Pepper reach for these when company's staying over, when there's a school breakfast to bring something to, or when a Saturday morning calls for something better than toast.

Every recipe here is a coffee cake worth the pan you bake it in: a plain Coffee Cake with butter and vanilla, a Cinnamon Coffee Cake, two takes on Blueberry Coffee Cake, and a Blueberry Sour Cream Coffee Cake with a tender crumb.

Quick Tips

  1. 1

    Toss berries in flour

Coat 1 cup of blueberries in a tablespoon of the flour before folding them in so they don't all sink to the bottom.

  2. 2

    Soften butter properly

Set the butter out 30 to 45 minutes ahead so it creams with the sugar into something light instead of greasy clumps.

  3. 3

    Stop stirring early

Mix just until the flour disappears, about 10 to 15 strokes by hand, or the cake turns tough and rubbery.

  4. 4

    Cool before slicing

Give the cake 20 minutes in the pan so the berry pockets set and the squares come out clean.
