Open in Pepper →Beer cheese is the kind of thing you make once and get asked about forever. It's cheddar, cream cheese, and a little beer, stirred until it's smooth enough to coat a pretzel and sharp enough that nobody needs a second dip to decide.
Cooks on Pepper reach for these when the game's on, when the neighbors are coming over, or when dinner is just a board of bread, apples, and something hot to dip them in.
Every recipe here is a real pot of beer cheese: the hot Beer Cheese Dip with cream cheese and shredded cheddar, a Slow-cooker Beer Cheese you can leave alone, The BEST Beer Cheese Dip with sharp, white, and Velveeta, a thickened version with cornstarch and flour, and a Torpedo Extra IPA Beer Cheese with aged white cheddar.
Shred your own cheese
Bagged shreds are coated to keep from clumping, and that coating turns grainy. Grate a 1-pound block yourself for a smoother melt.
Let the beer simmer first
Cook the beer 2 to 3 minutes before the cheese goes in so the raw, yeasty edge cooks off and the flavor stays mellow.
Add cheese off heat
Pull the pot off the burner and stir in the cheese a handful at a time. High heat breaks the sauce and leaves oil on top.
Thin it as it sits
Beer cheese tightens up as it cools, so stir in a splash of beer or milk, 1 tablespoon at a time, to bring it back.
