The Casserole That Feeds Everybody Twice

Baked spaghetti is what you make when you need dinner tonight and lunch tomorrow. Noodles, sauce, meat, cheese — it all goes in one dish and comes out sliceable.

Cooks on Pepper reach for these on nights when the house is loud, the kids are hungry, or somebody down the street needs a pan dropped off.

Every recipe here is a real baked spaghetti: the classic Baked Spaghetti with ground beef and onion, Easy Cheesy Baked Spaghetti with cheddar, Million Dollar Baked Spaghetti Casserole, French Onion Baked Spaghetti, and Christina's baked spaghetti with cream cheese and cottage cheese.

Quick Tips

  1. 1

    Undercook the noodles

Boil spaghetti 2 minutes shy of the box time. It keeps soaking up sauce in the oven and won't turn mushy.

  2. 2

    Drain the beef well

Brown a pound of ground beef, then pour off the grease before the sauce goes in, or the top layer turns oily.

  3. 3

    Cover then uncover

Bake covered with foil for 25 minutes, then uncover for the last 10 to 15 so the cheese browns.

  4. 4

    Let it rest

Give the pan 10 minutes on the counter before cutting so the slices hold together on the plate.
