The Cake You Make With Whatever Apples You Have

Apple cake is the kind of baking that doesn't ask much of you. A few apples on the counter going soft, some sugar and oil, one bowl, and you've got dessert for the week and something to slice off for breakfast.

Cooks on Pepper reach for this collection in the fall when the bag of apples is bigger than anybody's going to eat, or when company's coming Sunday and they want something that keeps well on the counter under a dish towel.

Every recipe here is a real apple cake somebody bakes at home: Kentucky Apple Cake with chopped apples and oil, Easy Apple Cake, Cinnamon Apple Cake, Cream Cheese Apple Cake, Nana's German Apple Cake, Traditional Swedish Apple Cake, a gluten free version, and apple cake muffins for lunchboxes.

Quick Tips

  1. 1

    Chop the apples small

Cut peeled apples into roughly 1/2-inch pieces so they soften all the way through in the time the cake bakes.

  2. 2

    Toss apples with lemon juice

A tablespoon of lemon juice over the chopped apples keeps them from browning while you mix up the batter.

  3. 3

Test the center at 45 minutes

Apple cakes stay moist, so check with a toothpick around 45 minutes and give it 5 to 10 more if batter clings.

  4. 4

    Cool before slicing

Let the cake sit in the pan at least 20 minutes so the apple juices set and the slices hold together.
