Open in Pepper →Dessert doesn't have to mean turning on the oven. A few spoons of chia seeds, some milk, a little honey, and you've got something sweet waiting in the fridge by morning.
Cooks on Pepper reach for these when the kids want a treat after supper, when the afternoon slump hits, or when they want something sweet in the fridge that took five minutes to put together on Sunday night.
Every recipe here leans on fruit, nut butter, and dark chocolate: PB Chocolate Chia Pudding, Creamy Coconut Mango Chia Pudding, Banana-Nut Bread Chia Pudding, Coconut peanut butter balls, Dark chocolate truffles, and an Orange & Dark Chocolate Snack you can pull off in a minute.
Stir twice, then chill
Whisk the chia and milk, wait 5 minutes, then whisk again to break up clumps before chilling at least 4 hours or overnight.
Start with 3 tablespoons
Three tablespoons of chia per cup of milk sets up thick and spoonable. Use less milk if you like it stiffer, more if you want it drinkable.
Thaw frozen fruit first
Let frozen strawberries or raspberries sit 10 minutes, then mash them so the juice folds through the pudding instead of pooling.
Chill the truffle balls
Roll the chickpea-chocolate mix or peanut butter balls, then freeze 20 minutes before dipping or serving so they hold their shape.
