Open in Pepper →When dinner cooks itself all day, you get to decide what goes in the pot — beans, peppers, tomatoes, garlic, a good piece of beef. That's the whole appeal of a crock pot meal made from scratch.
Cooks on Pepper reach for this collection on the mornings they know the evening is going to get away from them, and they still want a pot of something warm and homemade waiting at six.
Every recipe here is a full dinner from one pot: Crock pot Chicken tortilla soup, Crock Pot Beef Stew, Crock Pot Stuffed Peppers, The Best Crock Pot Barbacoa, Crock Pot Creamy Chicken Parmesan Soup, and Crock Pot Southwest Chicken and Rice.
Brown the beef first
Sear stew beef or cubed chuck roast in a hot skillet for 3 to 4 minutes per side before it goes in. It makes the broth in beef stew and barbacoa much deeper.
Add rice near the end
Stir uncooked rice into stuffed peppers or southwest chicken during the last 45 minutes on low so it stays tender instead of turning to mush.
Rinse your canned beans
Drain and rinse black beans for 30 seconds under cold water before adding them to tortilla soup or southwest chicken and rice.
Stir in dairy last
For creamy chicken parmesan soup, turn the pot off and add cream or cheese in the final 10 minutes so it doesn't separate.
