How to Store Ginger

Keep fresh ginger firm and juicy for weeks instead of finding a shriveled, moldy knob in the crisper drawer.

Ginger Wants Dry Air, Not a Plastic Bag

Most ginger dies in the plastic produce bag it came home in. Trapped moisture sits against the skin, and within a week you get soft spots and blue-green mold where the knob touches the bag.

Ginger is a root, so treat it like one: cool, dry, and able to breathe. Unpeeled ginger left loose in the fridge holds three to four weeks, and the freezer stretches it to months.

  • Leave The Skin On

    The papery skin is the ginger's own wrapper, so peel only what you need right now and store the rest whole and unpeeled.

  • Paper, Not Plastic

    A paper bag or a loose paper towel in the crisper wicks away condensation and buys you three to four weeks instead of one.

  • Freeze It Whole

    Frozen unpeeled ginger grates straight from the freezer on a Microplane, no thawing, and keeps up to six months with almost no flavor loss.

  • Know When It's Done

    Wrinkled skin is still fine to use, but toss it once the flesh is soft, gray, or slimy at the cut end — that's rot, not age.

    Skip the wash

    Do not rinse ginger before storing. Water on the skin is what starts the mold. Brush off any dirt dry.

    Get it out of the plastic

    Take it out of the produce bag the day you get home. Trapped humidity is the number one reason ginger goes fuzzy.

    Bag it in paper for the fridge

    Put the whole knob in a paper bag or wrap it loosely in a dry paper towel, then set it in the crisper drawer. Swap the towel if it feels damp.

    Freeze what you won't use in a month

    Drop the unpeeled knob in a zip-top freezer bag, press the air out, and freeze. Grate it frozen right into the pan.

    Seal any cut face

    If you slice into a knob, press the cut end against a piece of plastic wrap or lay it cut-side down on a plate so it doesn't dry into a hard cork.

    Check it weekly

    Give it a squeeze when you open the drawer. Firm means good. Squishy at any spot means cut that part away or throw it out.

Ingredients

  • 1 lb (450g) beef sirloin, thinly sliced
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup vegetable oil for frying
  • 2 tbsp fresh ginger, minced
  • 2-3 red chili peppers, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 green onions, chopped for garnish
  • sesame seeds for garnish (optional)

Instructions

  1. 1In a mixing bowl, combine cornstarch, flour, salt, and black pepper. Toss the sliced beef in the mixture until well coated.
  2. 2Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the beef in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.
  3. 3In the same skillet, add minced ginger, sliced chili peppers, and garlic, sautéing for about 1 minute until fragrant.
  4. 4Stir in soy sauce, brown sugar, and rice vinegar, cooking for another 2-3 minutes until the sauce thickens slightly.
  5. 5Return the crispy beef to the skillet, tossing to coat evenly with the sauce. Cook for an additional minute to heat through.
