The Soup That Makes Dinner Easy

Sausage, potatoes, kale, and cream in one pot — it tastes like it took all day and it doesn't. One big bowl with bread on the side and nobody asks what else is for dinner.

Cooks on Pepper reach for this collection on cold nights, when the fridge has half a bunch of kale and a roll of sausage, or when somebody wants that restaurant soup at home for a lot less money.

Every recipe here is a version worth cooking: the classic Zuppa Toscana, the Olive Garden Copycat with heavy cream and hot Italian sausage, Keto Zuppa Toscana Soup with crushed red pepper, Healthy Zuppa Toscana with sweet sausage, Creamy Zuppa Toscana, and a simple Kale Potato Soup.

Quick Tips

  1. 1

    Brown the sausage first

Cook the sausage 6 to 8 minutes until it's crumbled and browned, then leave a tablespoon of the fat in the pot to cook the onion and garlic.

  2. 2

    Slice potatoes thin

Cut Russets into 1/4-inch half moons so they turn tender in about 15 minutes and hold their shape instead of falling apart.

  3. 3

    Add cream off heat

Stir in the heavy cream after you cut the heat and keep it below a boil, or it can separate and look grainy.

  4. 4

    Stack kale in last

Tear the kale off the stems and add it in the last 5 minutes so it wilts bright green and still has a little chew.
