Brown the sausage first
Cook the sausage 6 to 8 minutes until it's crumbled and browned, then leave a tablespoon of the fat in the pot to cook the onion and garlic.
Slice potatoes thin
Cut Russets into 1/4-inch half moons so they turn tender in about 15 minutes and hold their shape instead of falling apart.
Add cream off heat
Stir in the heavy cream after you cut the heat and keep it below a boil, or it can separate and look grainy.
Stack kale in last
Tear the kale off the stems and add it in the last 5 minutes so it wilts bright green and still has a little chew.
