Open in Pepper →A cup of plain yogurt, some garlic, lemon, and spice, and even plain chicken breasts turn tender and browned at the edges. It takes five minutes in the morning and does all its work while you're busy with everything else.
Cooks on Pepper reach for this collection when they want dinner to taste like it took effort but really just took planning — weeknight grilling, sheet pan nights, or a slow cooker morning.
Every recipe here leans on that marinade: Chicken Tikka Masala, slow cooker chicken shawarma, Crispy Yogurt-Marinated Chicken with bone-in thighs, Grilled Greek Chicken, Greek Chicken Pita, and Chicken Tikka Naan Tacos.
Marinate at least four hours
Four hours gets you flavor, overnight gets you tender. Don't go past 24 hours or the texture turns soft.
Use thighs when you can
Boneless skinless thighs stay juicy even if you go 5 minutes long, which breasts will not forgive.
Scrape off extra marinade
Wipe the thick yogurt down to a thin coat before it hits the pan or grill so it browns instead of steaming.
Get the pan hot
Cook over medium-high, about 5 to 6 minutes a side, and leave it alone until it releases on its own.
