Every recipe here starts with watermelon and goes somewhere different: Watermelon Lemonade with the juice of three lemons, Watermelon Agua Fresca with fresh mint, a Strawberry Watermelon Smoothie, a slushie made with lemonade and ice, and a pineapple watermelon smoothie.
Freeze the melon cubes
Cut watermelon into 1-inch cubes and freeze them 4 hours ahead. Blended frozen, you get a thick slushie without watering it down with ice.
Add acid at the end
A tablespoon of fresh lime or lemon juice per 4 cups of blended melon keeps it from tasting flat and sweet.
Strain for clear juice
Pour blended watermelon through a fine mesh strainer and press with the back of a spoon for about 1 minute if you want smooth juice instead of pulp.
Chill the melon first
Refrigerate the whole watermelon at least 6 hours before cutting. Cold fruit means you need less ice and the drink stays bright.
