Chili I made with leftover ground turkey!

Ingredients

  • 2.5lbs Ground Turkey
  • 1 can Kidney Beans
  • 1 can Black Beans
  • 1 can Corn
  • 1 small can Diced Green Chiles
  • 1 can Diced tomatoes
  • 2 cups Chicken Broth
  • 1 Yellow Onion
  • 2 tbsp Minced Garlic
  • Salt and Pepper
  • Chili powder
  • Garlic powder
  • Onion powder
  • Paprika
  • Cumin
  • Oregano
  • 4 tbsp Olive Oil
  • Crushed Red Pepper
  • Cayenne Pepper

Instructions

  1. 1Cook diced onions are minced garlic in olive oil for about 6 minutes.
  2. 2Add Ground turkey and 1/2 of spices you're going to use.
  3. 3Once cooked, add rest of the ingredients and spices and let simmer for 2 hours.
  4. 4Once finished, sprinkle shredded cheese on top for some extra and it tastes great with tortilla chips dipped in it!

Turkey Earns Its Second Dinner

Leftover turkey or a pound of ground turkey both end up in the same place: a pot on the stove that feeds everybody without much fuss. The bones make broth, the meat stretches, and one bird turns into two or three dinners.

    Simmer the carcass first

    Cover the picked-over bones with water, add an onion half and a couple carrots, and simmer 2 to 3 hours for broth with real body.

    Brown ground turkey hard

    Cook the turkey in a hot pot 6 to 8 minutes without stirring much so it browns instead of steaming, then add onion and pepper.

    Add noodles at the end

    Stir egg noodles in during the last 8 to 10 minutes so they stay firm and don't soak up all your broth.

    Cook wild rice separately

    Wild rice takes 45 to 50 minutes and turns the broth murky; cook it on the side and spoon it into bowls.
