I thought I missed this summer, but lemon tiramisu keeps it endless ☀️ We need to create our own happiness.

Ingredients

  • 2 Egg Yolks
  • 2 Whole Eggs
  • 1/4 tsp Salt
  • 1/2 cup Sugar
  • Lemon Zest
  • 1/3 cup Lemon Juice
  • 4 tbsp Unsalted Butter
  • 1/2 cup Water
  • 1/4 cup Sugar
  • 1 lemon Juice & Zest from
  • 1/4 cup Limoncello (optional)
  • 1 1/2 cup Heavy Cream
  • 2/3 cup Lemon Curd
  • 8oz Mascarpone
  • 1 tsp Lemon Extract (optional)
  • Ladyfingers
  • Lemon Curd
  • Lemon Slices

Instructions

  1. 1Mix all ingredients in low heat. Keep stirring until thickened. Add in butter & cook for 5 mins
  2. 2Boil lemon juice and peels in water & sugar until aromatic. Once the syrup is cooled, pour in limoncello.
  3. 3Beat heavy cream until soft peak. Add in mascarpone, sugar, lemon curd and lemon extract. Then beat until firm peak
  4. 4Quickly dip ladyfingers in lemon syrup. Assemble everything together with lemon curd on top.
  5. 5Decorate with lemon slices and herbs you like. Chill for at least 6 hours before serving.

The Dessert You Make The Night Before

Tiramisu is the rare dessert that gets better sitting in the fridge. You layer it up after supper, cover it, and by tomorrow the cookies have softened into cake and the cream has set.

Quick Tips

    Chill it overnight

    Give it at least 6 hours in the fridge, but overnight is better. The ladyfingers need time to soften all the way through.

    Dip fast, don't soak

    One second per side in the coffee or juice is plenty. Any longer and the cookies fall apart into mush in the pan.

    Bring mascarpone to room temp

    Set it out 30 minutes ahead. Cold mascarpone breaks into lumps when you fold it into whipped cream.

  4. 4

    Whip the cream cold

    Chill the bowl and beaters 10 minutes first, then whip to soft peaks. Overwhipped cream turns grainy in the layers.
