Chill it overnight
Give it at least 6 hours in the fridge, but overnight is better. The ladyfingers need time to soften all the way through.
Dip fast, don't soak
One second per side in the coffee or juice is plenty. Any longer and the cookies fall apart into mush in the pan.
Bring mascarpone to room temp
Set it out 30 minutes ahead. Cold mascarpone breaks into lumps when you fold it into whipped cream.
Whip the cream cold
Chill the bowl and beaters 10 minutes first, then whip to soft peaks. Overwhipped cream turns grainy in the layers.
