Tempeh Soaks Up Whatever You Give It

Tempeh comes out of the package firm and plain, and that's the good news. Give it soy sauce, maple syrup, or balsamic and garlic, and it takes on that flavor all the way through instead of just on the outside.

Cooks on Pepper reach for these when they want dinner that holds up in the fridge — a pan of baked tempeh on Sunday that turns into salads and sandwiches Monday and Tuesday.

Every recipe here is straightforward: Simple Baked Tempeh with soy sauce and maple syrup, Tempeh Hash Bash with kale and peppers, Balsamic Tempeh with Lemon Roasted Veggies, Tempeh Caesar Salad, Honey Ginger Tempeh Salad with cucumber and cabbage, and Vegan Tempeh BLT Sandwiches.

Quick Tips

  1. 1

    Steam it first

Simmer or steam the sliced tempeh for 10 minutes before marinating. It softens the firm edge and helps the marinade get in.

  2. 2

    Slice thin for crisp

Cut planks about 1/4 inch thick for sandwiches and salads. Thick 3/4-inch cubes stay chewy in the middle.

  3. 3

    Marinate at least 30 minutes

Soy sauce, maple syrup, and vinegar need 30 minutes to soak in, and overnight in the fridge is better.

  4. 4

    Bake at 375 and flip

Spread pieces in one layer and bake 25 to 30 minutes, flipping halfway so both sides brown evenly.
