Steam it first
Simmer or steam the sliced tempeh for 10 minutes before marinating. It softens the firm edge and helps the marinade get in.
Slice thin for crisp
Cut planks about 1/4 inch thick for sandwiches and salads. Thick 3/4-inch cubes stay chewy in the middle.
Marinate at least 30 minutes
Soy sauce, maple syrup, and vinegar need 30 minutes to soak in, and overnight in the fridge is better.
Bake at 375 and flip
Spread pieces in one layer and bake 25 to 30 minutes, flipping halfway so both sides brown evenly.
