Warm the tortillas right
Heat corn tortillas 30 seconds a side in a dry skillet until they smell toasty and fold without cracking. Stack them in a clean towel to stay soft.
Sear the shrimp fast
Shrimp need about 2 minutes per side over medium-high heat. Pull them the moment they curl and turn opaque or they'll go rubbery.
Rest the steak
Let carne asada or chuck rest 10 minutes before slicing, then cut against the grain into thin strips so every bite stays tender.
Squeeze lime at the end
Add fresh lime juice right before serving, about half a lime per plate. Added early it cooks off and tastes flat.
