Ingredients

  • Shrimp
  • Cumin
  • Chili powder
  • Paprika
  • Garlic
  • 1-2 Jalapeños
  • 1 Pineapple(canned works)
  • 1 Orange juice
  • lots! Lime juice
  • half a head Cabbage
  • 1/2 cup Greek yogurt or sour cream
  • Chives or green onions
  • lots! Cilantro
  • 2 per person Flour tortillas
  • 2 Avacados
  • 1/2 Purple onion
  • Onion powder

Instructions

  1. 11. The shrimp! This is super simple! Heat a skillet with some garlic, olive oil, and I added a handful of white onion in there. Salt and Pepper! Once hot get those shrimp cooking! I sprinkled cumin, chili powder, paprika on top. Then flipped and sprinkled some more. Give it a dash more of each of you like extra spice! Adding spice is all a personal preference and who you are cooking for!
  2. 22. Pineapple Jalepeno Salsa! I love the sweetness of pineapple on the taco! Dice dice dice those jalepenos! Save some for the guacamole and slaw! Heat the jalepenos in a skillet with some garlic. I used a whole jalepeno. Then take a can of pineapple any kind and mix it in on the skillet. After getting a nice char add to a big handful of cilantro, juice of one orange, and some lime!
  3. 33. The Slaw!! Cilantro and Lime together the perfect combo! Slice the slaw! (About half the head) Dice the cilantro! (A big handful!) mix in the lime, garlic, salt, onion powder. Measure with the heart! Then stir in the sour cream or Greek yogurt about 1/2cup….. Add some jalepenos for some extra spice!
  4. 44. Guac!! Avacados(2), purple onion(1/2), some garlic, 1/2 handful of cilantro, 1/2 jalepeno, salt, and pepper!
  5. 55. Assemble!! Warm flour tortilla and put the taco together! Enjoy!

Taco Night Never Gets Old

Tacos stretch a pound of meat into dinner for everybody, and they let each person build their own plate. That alone makes them worth keeping in the weeknight rotation.

Cooks on Pepper reach for this collection when the afternoon got away from them, when the kids want something they can hold, or when they've got a chuck roast and a slow Saturday to spend on it.

Every recipe here is a real taco dinner someone made and saved: quick shrimp tacos with creamy cilantro sauce, easy Mexican street tacos, slow-simmered birria, crockpot shredded chicken, citrus pork, carne asada, steak and egg, and fried-dough Navajo tacos.

Quick Tips

  1. 1

    Warm the tortillas right

Heat corn tortillas 30 seconds a side in a dry skillet until they smell toasty and fold without cracking. Stack them in a clean towel to stay soft.

  2. 2

    Sear the shrimp fast

Shrimp need about 2 minutes per side over medium-high heat. Pull them the moment they curl and turn opaque or they'll go rubbery.

  3. 3

    Rest the steak

Let carne asada or chuck rest 10 minutes before slicing, then cut against the grain into thin strips so every bite stays tender.

  4. 4

    Squeeze lime at the end

Add fresh lime juice right before serving, about half a lime per plate. Added early it cooks off and tastes flat.
