Salt the squash first
Grate zucchini or yellow squash, toss with 1 teaspoon salt, and let it sit 10 minutes, then squeeze dry in a towel. Fritters hold together instead of steaming apart.
Soak rice paper briefly
Dip each wrapper in warm water for 10 to 15 seconds only — it keeps softening on the counter and tears if you soak it longer.
Don't overcook the shrimp
Shrimp are done in 2 to 3 minutes, as soon as they curl into a C and turn opaque. Pull them off the heat right then.
Dress salads at the table
Greens go limp within about 10 minutes of dressing, so toss strawberries, chicken, and greens right before you sit down.
