Dry the steak first
Pat both sides with paper towels and salt it 40 minutes ahead if you have time. Wet meat steams instead of browning.
Slice against the grain
Flank and skirt are full of long fibers — find the direction they run and cut across them at an angle, about 1/4 inch thick.
Get the pan hot
Heat cast iron over medium-high for 4 to 5 minutes before the steak goes in. You want it sizzling the second it hits.
Let it rest
Give a ribeye or sirloin 8 to 10 minutes on the board before cutting so the juices stay in the meat.
