Sausage, Potato, Spinach Soup

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Sausage meat, no casings
  • 1 Sweet onion, sliced
  • 5 cloves Garlic, minced
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • 1 tsp Red pepper flakes
  • To taste Salt
  • To taste Pepper
  • 5 cups Chicken broth
  • 1 lb Potatoes, diced
  • 3 cups Spinach
  • 1 cup Water

Instructions

  1. 1In a soup pot, heat the olive oil and fry up sausage meat until browned.
  2. 2Toss in your onion, garlic, and spices and cook until onion is translucent.
  3. 3Pour in your chicken broth and bring to a boil.
  4. 4Once boiling, add diced potatoes and boil for 10 minutes.
  5. 5Add water and spinach. Cook for 3 minutes until spinach starts to wilt.
  6. 6Serve with a lil salt and pepper and enjoy!

    Brown the sausage first

    Cook the sausage meat 6 to 8 minutes until there are dark bits on the bottom of the pot, then build the soup on top of them.

    Add spinach last

    Stir the spinach in during the final 2 to 3 minutes so it wilts but stays green instead of turning gray and stringy.

    Simmer potatoes until tender

    Cut potatoes into 1/2-inch pieces and simmer 12 to 15 minutes, until a fork slides in with no resistance.

    Temper the cream

    Lower the heat and stir cream or half-and-half in off a hard boil so it doesn't curdle, then warm 2 minutes more.
