A Can Of Spam Goes A Long Way

There's always a can in the back of the pantry, and it keeps forever. Slice it thin, get it crisp in a hot skillet, and it turns into dinner faster than anything you'd have to thaw.

Cooks on Pepper reach for these on the nights nobody planned ahead — payday is Friday, the fridge is thin, and everybody still wants something salty and hot on a plate.

Every recipe here starts with that can: Spam Musubi with sushi rice and soy sauce, Smoked SPAM rubbed and basted with apple juice, SPAM Fried Rice with frozen peas and carrots, Easy Teriyaki Spam, a Sunday Spam Sandwich on an asiago bagel, and Buffalo Spam S'mackin Cheese made with a box of mac.

Quick Tips

  1. 1

    Slice it thin

Cut the can into 8 even slices, about a quarter inch each, so every piece crisps instead of steaming.

  2. 2

    Skip the oil

Spam renders plenty of its own fat. Start it in a dry nonstick skillet over medium and give it 3 to 4 minutes a side.

  3. 3

    Rinse the sushi rice

For musubi, rinse the rice until the water runs clear, then let it cool 10 minutes before pressing so it holds its shape.

  4. 4

    Add sauce at the end

Soy sauce, mirin or teriyaki burns fast. Pour it in during the last minute and toss until the slices are glossy.
