Brown the beef first
Cook the ground beef over medium-high for 6 to 8 minutes until no pink is left, then drain most of the fat before the tomatoes go in.
Soften the onion slowly
Give the chopped onion 5 minutes in the drippings before adding garlic, which only needs about 30 seconds so it doesn't turn bitter.
Simmer at least an hour
A low, lazy simmer of 60 to 90 minutes with the lid cracked thickens the sauce and rounds out the tomato flavor.
Balance the acidity
If the sauce tastes sharp, stir in 1 teaspoon of sugar or a small pat of butter and taste again after 5 more minutes.
