Noodles On The Table In One Pan

Lo mein is the dinner you make when you want takeout but you already have noodles, soy sauce, and something in the freezer. It comes together fast, it stretches to feed everybody, and the leftovers heat up fine the next day.

Cooks on Pepper reach for this collection on the nights nobody can agree on dinner — the noodles keep the kids happy, and shrimp or steak makes it feel like a real meal.

Every recipe here is a noodle dinner: Shrimp Lo Mein, Steak & Shrimp Noodles, shrimp stir fry with noodles, Gigi P's Asian Shrimp Noodles, plus Garlic Chicken Lo Mein, Beef Lo Mein, Homemade Veggie Lo Mein, and slow cooker versions with chicken or pork shoulder.

Quick Tips

  1. 1

    Cook shrimp last

Shrimp needs only 2 to 3 minutes total — add it at the very end and pull the pan off the heat as soon as the shrimp curls and turns pink.

  2. 2

    Undercook the noodles

Boil them 1 to 2 minutes shy of the package time, then drain and rinse. They finish cooking in the sauce without turning mushy.

  3. 3

    Mix the sauce first

Stir the soy sauce, oyster sauce, and brown sugar together in a cup before you start. Once the pan is hot you have about 60 seconds to work.

  4. 4

    Get the pan hot

Heat oil over medium-high until it shimmers and cook in two batches. A crowded pan steams the vegetables instead of searing them.
