One Pan, Dinner Done, Kitchen Still Clean

A sheet pan does the work of a skillet, a roasting pan, and a casserole dish all at once. Meat on one side, vegetables on the other, hot oven, and supper takes care of itself while you help with homework.

Cooks on Pepper reach for these on the nights everybody gets home late and nobody wants to stand at the stove stirring. They're also the ones that get pulled out when the sink is already full from lunch.

Every recipe here is a full dinner on a single pan: Sheet Pan Sticky Sweet and Sour Chicken, a Steak Sheet Pan Dinner with potatoes and asparagus, an Easy Sheet Pan Shrimp Boil with corn and butter, Sheet Pan Nachos, Sheet Pan Fajitas and Quesadillas, Ranch Sheet Pan Dinner with bacon, BBQ smoked sausage with smashed potatoes and broccoli, Sheet Pan Salmon and Brussels Sprouts, and Mediterranean chicken with a yogurt-lemon marinade.

Quick Tips

  1. 1

    Preheat the pan too

Slide the empty sheet pan into the oven while it heats to 425°F. Food hits hot metal and starts browning right away instead of steaming.

  2. 2

    Give everything room

Use two pans if food is touching. Crowding traps steam, and potatoes that should brown in 25 minutes just turn soft and pale.

  3. 3

    Cut for even cooking

Chop potatoes into 1-inch pieces and slice peppers and onions about 1/2 inch thick so they finish at the same time as the chicken.

  4. 4

    Add quick things later

Start potatoes or sausage first, then add shrimp, salmon, or asparagus for the last 10 to 12 minutes so nothing overcooks.
