Ingredients

  • 8-10 Fresh Scallops
  • Dan-O’s Cheesoning Seasoning
  • Grapeseed Oil

Instructions

  1. 1Add scallops to a large bowl and coat with Dan-O’s Cheesoning.
  2. 2Heat a skillet to a medium temp and add grapeseed oil.
  3. 3Place scallops on skillet for 2 minutes each side.
  4. 4Remove and plate with a squeeze of lemon.
  5. 5Enjoy!

    Pat them very dry

    Blot scallops on paper towels for a full minute on each side. Any surface water steams instead of browning.

    Get the pan hot first

    Heat oil over medium-high until it shimmers, then add scallops without crowding — leave an inch between each one.

    Flip only once

    Sear 2 to 3 minutes until a golden crust forms, flip, and give them 1 to 2 minutes more. They should still be slightly soft in the center.

    Add butter at the end

    Drop in 2 tablespoons of butter and the garlic during the last minute so it browns instead of burning, then spoon it over the tops.
