Pat them very dry
Blot scallops on paper towels for a full minute on each side. Any surface water steams instead of browning.
Get the pan hot first
Heat oil over medium-high until it shimmers, then add scallops without crowding — leave an inch between each one.
Flip only once
Sear 2 to 3 minutes until a golden crust forms, flip, and give them 1 to 2 minutes more. They should still be slightly soft in the center.
Add butter at the end
Drop in 2 tablespoons of butter and the garlic during the last minute so it browns instead of burning, then spoon it over the tops.
