Open in Pepper →Queso is the thing you make when people are standing in the kitchen and dinner is still twenty minutes out. A block of cheese, a can of chilies, a little milk, and suddenly nobody is asking when you'll be done.
Cooks on Pepper reach for this collection on game days, birthdays, and the nights when a pan of dip and a bag of chips is honestly the whole meal.
Every recipe here is a different way to get there: Mexican Restaurant Style White Cheese Dip with white American and green chilies, Smoked queso dip with pepper jack and Colby-Jack, Chorizo Queso Dip with serrano and onion, a Chili's Queso Dip copycat with canned chili and lime, and Real Cheese Queso Dip for when you'd rather skip the Velveeta.
Grate your own cheese
Pre-shredded cheese is coated with starch that turns grainy when melted. Grate a 1-pound block yourself for a smoother pan of queso.
Melt low and slow
Keep the burner on low and stir every minute or two. High heat breaks the cheese and leaves an oily layer on top.
Thin it with milk
Add milk, half-and-half, or evaporated milk 2 tablespoons at a time until it ribbons off the spoon. It thickens fast as it cools.
Drain the meat well
Brown chorizo, sausage, or ground turkey first and pour off the grease before it goes in, or the dip will separate.
