Shred your own cheese
Bagged shreds are coated to keep from clumping, so they melt slow. Grate a block and you'll get a full melt in 3 to 4 minutes.
Cook the filling first
Ground beef, chicken, and peppers all need to be cooked through and drained before they go in — the tortilla only gets 3 minutes a side.
Use medium heat
High heat browns the tortilla before the cheese melts. Keep the skillet at medium and give each side 3 to 4 minutes.
Rest before cutting
Let the quesadilla sit 2 minutes off the heat so the cheese sets, then cut into wedges with a pizza wheel.
