Freeze it in cubes
Spoon sofrito into an ice cube tray and freeze; each cube is about 2 tablespoons, the right amount for a pot of rice or beans.
Pulse, don't puree
Run the blender in short 2-second pulses so the peppers and onion stay a little coarse instead of turning watery.
Cook it before adding liquid
Let 2 to 3 tablespoons sizzle in hot oil for 3 to 5 minutes until the raw onion smell is gone, then add rice, beans, or broth.
Brown the meat first
Sear chicken thighs or bone-in pork chops 4 to 5 minutes per side, then stir the sofrito into those drippings.
