Open in Pepper →Monday sets the tone. If breakfast is already in the fridge and dinner is in the slow cooker before you leave, the rest of the day feels a whole lot more manageable.
Cooks on Pepper reach for this collection on Sunday night, when they want jars of overnight oats lined up and a dinner plan that doesn't take a second thought after work.
Every recipe here is either made ahead or mostly hands-off: choc chip cookie dough overnight oats, banana bread overnight oats, a very berry breakfast smoothie, Monday Night Meatloaf, Baked Ziti, slow cooker chicken and potatoes, and honey garlic slow cooker chicken thighs.
Fill oat jars ahead
Stir oats, milk, and chia together and refrigerate at least 6 hours, or up to 4 days, so breakfast is grab-and-go all week.
Brown the meat first
Cook the ground beef or sausage for your ziti 6 to 8 minutes until no pink remains, then drain the fat so the sauce isn't greasy.
Let meatloaf rest
Pull the loaf at 160°F and let it sit 10 minutes before slicing so it holds together instead of crumbling.
Layer the slow cooker
Put potatoes and carrots on the bottom and chicken on top, then cook on low 6 to 7 hours so the vegetables get tender without the meat drying out.
