Open in Pepper →Potato soup is what you make when the fridge is thin and everybody's cold. A few potatoes, an onion, some broth, and you've got a full supper for pennies.
Cooks on Pepper reach for these on busy weeknights, snow days, and any evening when the slow cooker can do the work while they're out.
Every recipe here is a real pot of soup, from Loaded Potato Soup and Loaded Baked Potato Soup to Easy Cheesy Crockpot Potato Soup, Instant Pot Potato Soup, and a Creamy Cauliflower Potato Soup.
Pick the right potato
Russets break down and thicken the pot on their own; Yukon Golds hold their shape and stay buttery. Cut them into 1-inch cubes so they cook evenly in about 20 minutes.
Mash some of the potatoes
Press a cup or two of the cooked potatoes against the side of the pot with a spoon. It thickens the soup without any flour.
Add dairy at the end
Stir in sour cream, cream cheese, or milk during the last 15 minutes and keep the heat low so it doesn't curdle.
Cook the bacon separately
Fry 6 slices until crisp, drain, and crumble it over each bowl so it stays crunchy instead of going soft in the pot.
