Ingredients

  • 3 tbsp Butter
  • 1 1/2 cup Baby Bella Mushroom
  • 1 Onion
  • 1 Bell Pepper
  • 1 lb Sliced beef
  • 1/2 tsp Garlic powder
  • 6 slices Provolone
  • Hoagie roll
  • Mayonnaise

Instructions

  1. 1In a large skillet, melt butter over medium-high heat. Once butter is sizzling, sauté mushrooms until golden brown, about 5 minutes. Then transfer to a plate and set aside.
  2. 2Add onions into same skillet and sauté until slightly caramelized, about 5-6 minutes.
  3. 3Add peppers into skillet with onions and cook until peppers get soft, about 3-4 minutes. Then set onions/peppers aside with mushrooms.
  4. 4Add steak into pan and cook until all meat is browned, about 5-6 minutes. Season steak with spices and add all veggies back into skillet. Stir to fully combine.
  5. 5Using a spatula, section off each serving in your pan and place cheese slices directly over each serving. Take off heat and allow residual heat to melt cheese onto steak mixture.
  6. 6Lightly toast hoagie rolls and smear with a bit of mayo, if desired. Add more cheese to prepared rolls and fill each roll with cheesesteak mixture. Roll each sandwich in foil and allow to sit for at least 5 minutes, then enjoy!

Steak And Onions On A Soft Roll

A cheesesteak is a whole dinner in one hand: thin steak, onions cooked down soft, cheese melted right into the meat. It feeds teenagers and it feeds a table of grown-ups, and nobody ever pushes it around the plate.

Cooks on Pepper reach for these on nights when everyone eats at a different hour, when the game is on, or when they need something hot and filling without a pile of side dishes.

Every recipe here handles it a little differently — the Easy Philly Cheesesteak with butter, baby bella mushrooms, and onion; Philly Cheesesteak Sliders baked in Hawaiian rolls; a classic ribeye version; a Slow Cooker Philly Cheesesteak built on chuck roast and beef consommé; and a Sheet Pan Philly Cheesesteak with Worcestershire and Dijon.

Quick Tips

  1. 1

    Freeze the steak first

Put ribeye in the freezer 30 to 45 minutes, then slice it against the grain as thin as you can. Half-frozen meat holds still under the knife.

  2. 2

    Cook onions low and slow

Give sliced onions 12 to 15 minutes in butter over medium-low heat until they're soft and golden, before the meat ever hits the pan.

  3. 3

    Get the pan hot

Sear the steak in a screaming-hot skillet for 2 to 3 minutes total. Any longer and thin slices turn tough and gray.

  4. 4

    Melt the cheese on top

Pile the meat, lay the cheese over it, and cover the pan for 1 minute so the steam melts it all the way through.
