Peruvian Chicken Soup

Ingredients

  • 3 cups Chicken, cooked and shredded
  • 1 Tbs Avocado oil
  • 1 Poblano pepper, diced
  • 1 Yellow onion, diced
  • 1 Serrano pepper, minced
  • 4 cloves Garlic, minced
  • 6 cups Chicken broth
  • 4-6 Russet potatoes, diced
  • 3 Carrots, diced
  • 1/2 cup Brown rice
  • 2 tsp Cumin
  • Salt & pepper
  • 1 Bunch cilantro, chopped fine
  • From 1 lime Lime juice

Instructions

  1. 1In a large pot, heat oil over medium high heat. Add onion and poblano and cook until onion is translucent, about 3-4 minutes. Add Serrano and garlic and sauté again for 3-4 minutes or until garlic is fragrant. Pour mixture into a food processor and blend until smooth.
  2. 2Return pot back to medium high heat. Add 5 cups broth, potatoes, carrots, cumin and rice and cook for 25-30 minutes or until potatoes and rice and tender and done. Add cooked chicken to pot and let cook for another 10 minutes.
  3. 3Add cilantro, lime juice, salt, pepper, and remaining cup of broth to blender with the onion mixture. Pulse until smooth. Stir mixture into soup pot. Let cook for another 5 minutes and then serve.

    Aji amarillo is essential

    Aji amarillo paste is the backbone of Peruvian cooking. Keep a jar in the fridge — it goes into ceviche leche de tigre, aji de gallina, and most sauces for an unmistakable fruity heat.

    Cure ceviche briefly

    Peruvian ceviche marinates for only 3–10 minutes in leche de tigre — not hours. Short curing keeps the fish tender and bright rather than turning it tough and opaque.

    Lomo saltado needs very high heat and a well-seasoned wok or cast iron pan. Low heat steams instead of stir-frying, and you lose the essential char and smoky soy flavor.

    Grilled anticuchos (beef heart skewers) are traditionally served with huacatay black mint sauce. If fresh huacatay is hard to find, blend a jarred paste with lime juice, oil, and a little garlic.
