Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. 1Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. 2In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. 3In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. 5Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. 6Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Allow to cool slightly before serving.

    Grease every cup well

    Pancake batter sticks. Butter or spray each cup, including the top of the pan, or use paper liners for the mini muffins.

    Fill two-thirds full

    Batter rises fast with a tablespoon of baking powder in it. Leave room or the tops will spill over and flatten.

    Add mix-ins on top

    Drop blueberries or chocolate chips onto the filled cups instead of stirring them in, so they don't all sink to the bottom.

    Cook the bacon first
