Grease every cup well
Pancake batter sticks. Butter or spray each cup, including the top of the pan, or use paper liners for the mini muffins.
Fill two-thirds full
Batter rises fast with a tablespoon of baking powder in it. Leave room or the tops will spill over and flatten.
Add mix-ins on top
Drop blueberries or chocolate chips onto the filled cups instead of stirring them in, so they don't all sink to the bottom.
Cook the bacon first
For maple bacon bites, crisp and chop the bacon before it goes in the batter — 6 to 8 minutes in a skillet is plenty.
