Ingredients

  • 12 oz Chicken sausage (Italian style)
  • 1 tsp Olive oil
  • 1/2 tsp Onion powder
  • 4 Garlic cloves (minced)
  • 1 cup Orzo
  • 1/2 tsp Red pepper flakes
  • 1/4 cup White wine (dry)
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • Half a small jar Sun dried tomatoes
  • 1/2 tsp Italian seasoning
  • Half a bag Baby spinach
  • 1/4 cup Parmesan & Asiago cheese (grated)
  • Salt & pepper

Instructions

  1. 1Slice the chicken sausage into about 1/4 inch pieces. Heat olive oil in a large saucepan over medium heat. Add the sliced sausage and cook for about 5 minutes stirring occasionally so all sides get browned.
  2. 2Mix in onion powder, minced garlic, uncooked orzo, and red pepper flakes. Let the garlic cook and the orzo toast for 1-2 minutes.
  3. 3Pour in the white wine then pour in the chicken broth and heavy cream. Add the sundried tomatoes, italian seasoning, and salt and pepper to taste. Cook for about 10-15 minutes or until the orzo is cooked through.
  4. 4Once the orzo is cooked, remove from the heat. Add the spinach and cheese and stir to combine. Add a lid and let it sit for a couple minutes until the cheese melts and the spinach wilts.
  5. 5Serve with more cheese on top!!
