Dry the okra first
Pat cut okra completely dry with paper towels before it hits buttermilk or oil. Wet pods steam instead of crisping.
Fry in small batches
Keep oil at 350°F and fry a single layer at a time, about 3 to 4 minutes, so the temperature does not drop.
Cook down the slime
For smothered okra, cook it uncovered over medium heat 20 to 30 minutes with tomatoes; the acid and time break down the sliminess.
Stir the roux constantly
For gumbo, whisk equal parts oil and flour over medium-low for 30 to 45 minutes until it is the color of milk chocolate, and never walk away.
