Use full-fat dairy
Cream cheese and heavy cream do the structural work. Low-fat versions stay loose and refuse to set.
Chill, don't rush
Most no-bake desserts need 4-6 hours minimum to set. A quick hour in the freezer is not a substitute.
Press the crust firmly
A loose crumb crust falls apart on the first slice. Use the bottom of a measuring cup to compact it evenly.
Bloom your gelatin
If a recipe calls for gelatin, sprinkle over cold water and let it soften 5 minutes before adding heat — otherwise it clumps.
