Soak the beans overnight
Cover dried beans with 3 inches of cold water and leave them 8 hours. If you forget, boil 2 minutes and let them sit off the heat for 1 hour.
Salt at the end
Ham, kielbasa, and smoked sausage all give off plenty of salt, so wait until the beans are fully tender before you taste and season.
Brown the sausage first
Cook sliced kielbasa or Italian sausage 5 to 6 minutes in the pot, then build your onion, celery, and garlic in the drippings.
Mash for a creamy pot
Scoop out 1 cup of cooked beans, mash them with a fork, and stir them back in for body without any cream.
