Fresh Garlic Makes The Whole Dinner

Garlic out of a jar will get you through, but a few cloves minced fine on your own cutting board smell better and taste better in everything from a skillet of shrimp to a pot of pasta sauce.

Cooks on Pepper reach for this collection on the nights when dinner needs to taste like it took longer than it did, or when there's chicken thawed and no plan yet.

Every recipe here leans on garlic: honey garlic chicken, lemon butter garlic shrimp, garlic Parmesan pasta, creamy beef and shells, seafood boil with garlic butter sauce, garlic butter naan bread, roasted garlic bacon and beer cheese soup, and garlic Parmesan smashed potatoes.

Quick Tips

  1. 1

    Smash before you peel

Lay the flat of a knife on the clove and press down hard. The skin slips right off in about 2 seconds.

  2. 2

    Salt the cutting board

Sprinkle a pinch of kosher salt over the chopped garlic and drag the knife through it. The salt grinds it into a fine paste in 30 seconds.

  3. 3

    Add garlic last

Stir minced garlic into hot butter or oil for only 30 to 60 seconds before the liquid goes in. Any longer and it turns bitter.

  4. 4

    Roast whole heads slow

Cut the tops off, drizzle with olive oil, and bake at 400°F for 40 minutes until the cloves squeeze out soft and sweet.
